Carrot Cake


  • 3 Eggs 
  • 4 tbsp Sunflower oil
  • 3 tbsp Welsh Honey
  • 8oz Finely grated carrots
  • 8oz Wholemeal flour
  • 1 tsp Baking powder 
  • ½ tsp Ground cinamon
  • 3 oz Sultanas
  • 3 oz Ground almonds


  1. Mix eggs with sunflower oil and honey. Beat well. Add grated carrot, stir in flour, baking powder, spice, sultanas and ground almonds. Mix well.
  2. Bake in 7 inch round lined tin at 180 deg C 350 deg F Gas mark 4 for approx 1 hour until golden and firm.
  3. Allow to cool for half hour in tin then cool completely on baking tray.
