Green Bean Salad
450g / 1lb runner beans
100g / 4oz bacon
2tbsp of white wine vinegar
4tbsp of virgin olive oil
1tbsp course grain mustard
140g / 5oz cherry tomatoes
Green runner beans Firstly prepare your salad items, cutting the runner beans into fine slivers and cutting the cherry tomatoes into wedges
Blanch the beans in a large pan of boiling salted water for 3 minutes, then drain and cool under cold running water, drain well and transfer to a serving plate
Heat a frying pan and add the bacon and let it cook until crispy. Remove from the pan and warm through before whisking in the mustard. Pour the warm dressing over the beans.
Toss in the tomatoes, and season well with sea salt and freshly ground black pepper. Garnish with the crispy bacon and serve warm.
