Strawberry Eton Mess
3 ready made meringue nests
350g / 12oz of fresh strawberries
4 tbsp dry white wine
85g / 3oz caster sugar
Finely grated zest and juice of 1 lemon
284 mil carton of double cream
Icing sugar for dusting
Three strawberries Break the meringues into pieces in a bowl. Hull and cut the strawberries into quarters and put 50g / 9 oz into the bowl.
In a large bowl, stir together the wine, sugar, lemon zest and juice until the sugar has dissolved. Using a whisk, gradually whisk in the cream until the mixture holds the whisk's shape.
Spoon the cream mixture into the meringues and strawberries, gently stirring together. Do not over mix or the cream will turn pink. Spoon into a serving bowl, scatter with strawberries and chill. Dust with icing sugar just before serving.
