Irish Hot Pot
1 1/2lb Stewing Steak, cubed
8oz Leeks, finely chopped
2 tablespoons Pearl Barley
2 sticks celery, chopped
11/2 Pints stock made with 2 stock cubes
2 medium Parsnip, finely diced
Salt & black pepper
1 medium Carrot, finely diced
8oz Onions – finely chopped
1 Bay leaf
2lb Potatoes, sliced
3 tablespoons chopped Parsley (if desired)
Heat a little oil in a frying pan and brown meat.
Transfer to a large flameproof casserole, add barley, stock and seasoning to taste.
Bring to a simmer, cover and cook gently for 30 minutes.
Add all other ingredients except parsley.
Mix well, bring to the boil, cover and simmer very slowly on top of the cooker, without stirring for 1 ¼ hrs.
Remove bay leaf and add parsley before serving.
